Here is my never fail recipe for bannock with pictures. My bannock always comes out tender and fluffy. It is the same recipe as tea biscuits. Tea biscuit dough is rolled out and cut into circles and baked. My tea biscuits could be used as hockey pucks however ! ! !
Bannock recipe:
3 cups flour
2 teaspoons baking powder
pinch salt
1 tablespoon sugar
1/4 cup softened butter
1 1/2 cup water
Mix first 4 ingredients. Cut butter into flour mix. Simply put add the butter to the flour mix and use a fork to squish the butter into the flour. Do this until the butter is all cut into the flour.
Add the water and mix to turn into a dough. You can start by mixing the flour into the water with a spoon.
After it becomes hard to stir begin to kneed the dough with your hands. Just keep punching or pushing your fist into the mixture for about 1 minute. Be sure to mix in all of the flour.

Grease pan with oil or butter. I usually just use a muffin paper liner and rub it on the butter then rub the butter onto the pan. You can use any cookie sheet to bake the bannock.

Once the dough is mixed and looks like the image on the left you can pat it into a rectangle loaf shape and lift it into the pan.

You want the bannock to be a couple of inches thick and you want the bannock to be fairly evenly shaped all around. If one side is larger then the other one side will over cook and one side will under cook.

Bake the bannock at 350 degrees for about 15 to 18 minutes. Once it looks golden brown in color insert a knife into the center of the bannock. If the knife comes out clean the bannock is done. Take it out of the oven.

Using some wax paper or in my case I use a muffin tin paper liner dip it in butter and wipe the butter over the bannock. This will keep the bannock soft once it cools down.
